Mint Meringue Cookies

Perfect for Christmas time or St. Patrick’s Day and one of my favorites!

What you will need:
– 2 egg whites
– 1/2 tsp cream of tartar
– pinch of salt
– 3/4 cup of sugar
– green food coloring
– 1 bag of mint chocolate chips
– parchment paper

 

And if you want to be really exact about measuring out ‘one pinch’ of salt, they make these measuring spoons. 🙂

 

Preheat the oven to 375 degrees.
In a mixing bowl put 2 egg whites, 1/2 tsp cream of tartar and pinch of salt together and mix together until stiff.

 

Then add 3/4 cup sugar and 3 drops of green food coloring.

 

Fold in the full bag of mint chocolate chips.

 

Place a sheet of parchment paper on a cookie sheet and drop onto the parchment paper.

 

Turn the oven off before you put them in and leave them in the oven for 5-6 hours or overnight.
